Giorgio is the quintessential “olive man”. For generations, his family has managed the Stiava grove. The first time he was taken there was in his mother’s arms at the age of one month. After the many years his family managed the grove, he fulfilled his and likely, his past family’s dream, by buying the land on which he spent most of his working life dividing his expenses with his close friends, Alessio and Giuseppe.
Giorgio knows his olive trees individually and can be seen and heard to laugh and cry with them. His grove is where he meditates, spends days outdoors enjoying the splendid view of the sea and the breeze blowing through his hair. But at the same time, it is also where he sweats, works hard to care for his trees, each one of which, he treats as a real son.
Besides having a visceral passion for the care of his trees, Giorgio is also one of the most well-known producers and tasters of Tuscan extra-virgin olive oil. He follows each procedure; from nourishing the trees, harvesting and pressing, bottling to storage, with maniacal and almost paranoid care.
The olive grove is populated by many creatures such as wild boar, small roe and large fallow deer, foxes, hedgehogs, and of course, nocturnal porcupines.
